The Mediterranean Meets LA Summer

Join me in taking advantage of all the fresh summer produce to make a fresh healthy lunch, we'll make our own focaccia, grill portabello mushrooms, and make a fresh vegetable packed Greek style Salad!

On the menu: Focaccia, Grilled portabello mushrooms, and a Greek salad.

4 cups all purpose flour
1 1/4 tsp rapid rise/instant yeast
2 tsp kosher salt
1 c olive oil
2 Portabello mushrooms
2 cloves garlic
5 oz feta cheese
1 bell pepper (I like green but any color works)
1 c kalamata olives
1 english cucumber
4 roma tomatoes
1/4 red onion
2 T capers
3 T red wine vinegar
1 T dried oregano
salt and pepper
(optional) fresh rosemary, olives, garlic, thyme for topping foccacia

Supplies needed:
1 9"x13" baking sheet/pan
1 large bowl
1 towel or plastic wrap
1 salad bowl
1 stove top grill/griddle or oven broiler
1 knife
1 cutting board
